BOZEMAN’S CHEF CLAUDIA GALOFRE-KREVAT OF CLAUDIA’S MESA WILL JOIN THE RED ANTS PANTS MUSIC FESTIVAL BLOCK PARTY THIS COMING APRIL 2, 2016, TO KICK OFF THE MONTANA LENTIL CARAVAN.
Bozeman Chef Claudia Galofre-Krevat has received a grant from The Red Ants Pants Foundation, whose mission is to expand leadership roles for women, support working family farms and ranches and promote and enrich rural communities. With funds from this grant, Chef Claudia will travel to rural Montana introducing home cooks and school food service workers to lentils.
With 2016 being declared the International Year of the Pulses by the United Nations and considering that Montana is the #1 grower of organic and non-organic lentils, Galofre-Krevat created recipes inspired by the cultural heritage of the people in various Montana towns which she plans to sample at house parties, school functions, cooking demonstrations and social events during this lentil tour-de-force.
“We want to make sure that Montana’s population, from the rural areas and the prairies, the farmlands and the heartlands, to towns like Bozeman, Missoula, Billings, Butte, Helena and Great Falls, taste the delicious flavors of these highly dense plant protein legumes and use them in their diets. What better way than to start our tour at Meagher County than with our Irish Lentil Stew with Potato Bread, “says Chef Claudia.
“Connecting Red Ants Pants Music Festival fans with the lasting, positive impact they have in Montana is a win-win,” said Sarah Calhoun, Director of the Red Ants Pants Foundation and Producer of the Festival. “We are thrilled to have Claudia and her tasty lentils at our Lineup Release Block Party. Having a Red Ants Pants Foundation grant recipient kick off her caravan project in White Sulphur Springs only strengthens the work we are all doing!”
Galofre-Krevat, a native of Barranquila, Colombia who moved to Bozeman in 1998, is a believer in “local food, global flavors,” She’s been working with Timeless Seeds – a Montana company that grows and sells organic lentils and heritage grains – to craft Latin-inspired fusion dishes featuring their products. As a result, she was tapped in 2015 by Michael Pollan protégé Liz Carlisle and joined the book tour for Lentil Underground, Carlisle’s new book about Timeless Seeds and the sustainable agriculture movement behind it. Part of the tour included cooking for Pollan himself and teaching a cooking class at Stanford University’s Teaching Kitchen.
“Chef Claudia is an incredibly talented and creative chef. This woman is destined to be a culinary star. I am thrilled Claudia will be a major part of introducing Montana organic products to audiences and college campuses across the country. “says David Oien from Timeless Seeds.
While the Lentil Caravan Kick Off is scheduled for April 2, 2016, at Red Ants Pants headquarters in White Sulphur Springs, Galofre-Krevat is holding a Bozeman tasting at her commissary kitchen and hub located at Red Tractor Pizza, during their grand opening on March 26, 2016, at 6:00PM.
