The organic garden at Norris Hot Springs is cranking out produce this summer in record numbers. In addition to being delicious, organic fruits and vegetables reduce the risk of many chronic diseases. USDA regulations encourage making half your plate fruits and vegetables.
Vegetables are an important part of healthy eating and provide a source of many nutrients, including potassium, fiber, folic acid and vitamins A, E and C. Options like broccoli, spinach, tomatoes and garlic provide additional benefits, making them a super-food.
The garden staff at Norris Hot Springs works closely with Chef Abe to deliver the freshest and most nutritious food right to your plate. In a list of the vegetables with top health benefits, the surprise winner is the onion. You’ll get the most out of this veggie’s cancer-fighting antioxidants by eating it raw; cooking onions at a high heat significantly reduces the benefits of phytochemicals that protect against lung and prostate cancer. Corn follows in second place. A study in the Journal of Agricultural Food and Chemistry reports the longer corn was cooked, the higher the level of antioxidants like lutein, which combats blindness in older adults. Peas come in third. Tiny but mighty, one cancer study found that daily consumption of green peas along with other legumes lowered the risk of stomach cancer. Kale stands out even among all the leafy greens as one of the healthiest vegetables in the supermarket. Kale’s curly green leaves are chock full of vitamin C, an antioxidant that may lower levels of LDL, or “bad” cholesterol.

He plays original folk rock for the soul, and describes his guitar style as the “West Dakota stutter.” His lyrically scrambled iambic pentameter can be politically bent, spiritually seeking, and tongue-in-cheek humorous with just a twist of serious.
Roots rock duo Acoustic Roll will entertain on Saturday, August 10th. Comprised of Rod Morrison and Mike Voeller, they’ll bring their guitar and percussion based acoustic music to the poolside stage. Expect to hear mellow sounds from the 60s and 70s (Stones, Beatles, Clapton, James Taylor, The Who, Dylan, Young) mixed with tasty jams and original tunes.
Aaron Williams performs on Sunday, August 11th. From rock/reggae band In Walks Bud, Aaron will be playing a variety of tunes including rock, folk and reggae. Norris-goers love when he takes the Poolside stage.
